Honey Cardamom Granola

3 Cups Rolled Oats
½ Cup Nuts, chopped
½ Cup Coconut flakes, unsweetened
1 tsp Cinnamon, ground
½ tsp Cardamom, ground
½ tsp Sea Salt
⅓ cup Honey
½ cup EVOO
1 tsp Vanilla

  1. Preheat the oven to 275°F and line a rimmed baking sheet with parchment paper
  2. In a large mixing bowl, combine the oats, nuts, coconut, cinnamon, cardamom, and salt
  3. Add the honey, oil, and vanilla and stir until evenly combined
  4. Spread out on the baking sheet. Bake for 40 minutes, stirring after 20 minutes, until lightly browned. Cool completely before breaking up the clusters
  5. Transfer to a widemouthed glass jar with a lid
  6. Enjoy.
