Sourdough Pancakes

500g bubbling culture
1 Tbsp Sugar
1 Egg
1 Tbsp Vegetable Oil
1/2 tsp Salt
1/2 tsp Baking Soda

Feed culture normally (50g culture, 200g white, 50g wheat, 200g water @ 80-85F) including 1Tbsp sugar.

After 8-12hrs, beat egg in bowl. Add whole of culture (remaining bits left in container will be enough to continue culture with additional feeding) to egg and mix with oil and salt. Stir until smooth & even.

Mix baking soda with 1 Tbsp water & gently fold into mixture.

Heat griddle to med-low, scoop 1/4 C of culture onto griddle, & cook till many bubbles appear. Flip pancake, cook other side, then serve!
