Asian Spicy Chicken Lettuce Wraps

2.5 Tbsp Soy Sauce
1 Tbsp Fish Sauce
1 Tbsp Sambal Oelek
1.5 Tbsp Dark Brown Sugar
2.5 Tbsp Salt-free Peanuts
4 Garlic cloves
5 Scallions/Green Onions
Juice of 1/2 lime
1 lb Ground Chicken/Turkey
1 head Butter/Bibb Lettuce
Any herbs desired to serve with (cilantro, basil, shiso,…)

Blitz peanuts. Mix soy sauce, fish Sauce, Sambal, brown sugar, & blitzed peanuts in a bowl and set aside. Dice garlic. Thinly slice white and light green parts of scallions. Slice remaining dark green parts of green onions & set aside for serving. Heat 2 Tbsp peanut oil in a skillet over medium heat. Cook garlic & shallots, stirring frequently until softened with a bit of color (~3min). Add ground chicken & lightly season with salt. Cook, breaking up chunks, until chicken is cooked through. Add sauce mix and cook, mixing thoroughly, until liquid is nearly completely reduced. Add lime juice and mix. Serve in lettuce wraps with sliced scallions, herbs, lime wedges, and additional hot sauce.
