Ham & Bean Soup

20 oz 15 Bean Mixture Package, soaked overnight

1 Ham Bone

2.5 cups Ham, cubed

1 Large Onion, chopped

3 Stalks Celery, chopped

1 can Diced Tomatos (14.5 oz)

1 can Vegetable Juice, Low-Sodium (12 oz)

3 cups Vegetable Broth

1/2 cup Brown Sugar

2 Tbsp Worcestershire Sauce

2 Tbsp Dijon Mustard

1 Tbsp Chili Powder

1 tsp Dried Parsley

3 Tbsp Lemon Juice

7 cups Chicken Broth, low sodium

1 tsp Kosher Salt

  1. Place soaked beans into a large pot and fill with water to cover by about 1 inch. Bring to a boil, then reduce to low and simmer for 30 min. Drain. Add all remaining ingredients but only pour enough chicken broth to cover the ingredients.
  2. Simmer over low heat for 8 hrs, stirring occasionally. Add chicken broth as needed though out the day. Remove the ham bone & salt to taste. Simmer for a couple more hours.
